WINEMAKING: Eric Bordelet previously at the helm of the wine programme at three star michelin L’Arpege in Paris returned to his family’s 19ha orchards on the advice of the late, great Didier Dageneau. On returning he turned the property Biodynamic and is creating some of the greatest ciders ever made! the underlying quality coming from the terroir and variety of fruit trees, some two hundred to three hundred years old.
TASTING NOTES: The Poire Authentique is from 40-50 varieties of heirloom pears from granite based soils. The fruit is dehydrated for 4-5 weeks and then simply ground. Done in a traditionally off dry, sparkling style. Very expressive aromatics with a gentle mousse and beautifully balanced.
