The De Moor estate is located in the small village of Courgis, in the region of Chablis. Alice and Olivier De Moor planted their first vines in 1989, but really started the De Moor estate in 1994, when they had 4 hectares of vineyards. Unlike the classical Burgundy winemaking approach, they immediately focused on making pure, natural wines. The De Moors have worked their vines organically since 2005, using gentle vinification processes for the wines, ensuring the most natural and respectful use of their terroir.
The Aligoté grapes come from two plots of 2.5 hectares in the commune of Chitry. The vineyard was planted in 1996, its soil is of a calcareous type resulting in wines of great quality, the terroir has been named Champagne.

FARMING: Organic and biodynamic farming. Hand harvested
WINEMAKING: Direct pressing, gentle press of the grapes, spontaneous fermentation with indigenous yeasts takes place in stainless steel tanks. Malolactic fermentation done. The resulting wine then ages for 12 months in used foudres & oak barrels. Light addition of SO2 at bottling.
TASTING NOTES: Expressive nose of jasmine, honeysuckle, lemon peel and apricot. Mouthwatering acidity balanced by a rich body and apple crunch on the finish.
