De Moor - Bourgogne Chitry 2020

he De Moor estate is located in the small village of Courgis, in the region of Chablis. Alice and Olivier De Moor planted their first vines in 1989, but really started the De Moor estate in 1994, when they had 4 hectares of vineyards. Unlike the classical Burgundy winemaking approach, they immediately focused on making pure, natural wines. The De Moors have worked their vines organically since 2005, using gentle vinification processes for the wines, ensuring the most natural and respectful use of their terroir.

1.2 hectares of Chardonnay in two contiguous parcels in Chitry (down the road from their home village of Courgis - both are near the town of Chablis and part of the Chablis region). Like their nearby Aligoté, they planted the Chardonnay from 1995-1998.

SOILS: Soils of 25-30 centimetres of clay over hard limestone rock

FARMING: Organic and biodynamic farming. Hand harvested

WINEMAKING: The fruit is destemmed, then gently pressed & fermented spontaneously with indigenous yeasts in stainless steel tanks. The wine goes through malolactic fermentation & is aged on its lees without bâtonnage in a combination of enamel-lined steel tank, used Burgundy barrels & 2500L foudres, for 12 months. Bottled unfined & unfiltered, with just a light addition of SO2.

TASTING NOTES: Honeysuckle and white strawberry scents furnish the well- defined nose, while the vibrant, lively palate offers pear, ginger & sage notes. Very persistent on the aftertaste. A delightful, quite complex Bourgogne.

FOOD PAIRING STYLE: Epoisses cheese, sole meunière, chicken with creamy mushroom sauce. Fresh & Juicy
