In 1903 in Nuits-Saint-Georges, Alexandre de Mayol de Lupé and Félix de Cholet decided to join forces to create the House which still bears their name, Lupe Cholet.
« To bring together the best of soil, vine and human skill to produce wines of unique personality » was their motto and is still ours today.
Owners of 25 hectares (61,5 acres) of vineyards in Chablis and the Côte d’Or, we also have long-established partnerships with various wine growers throughout Burgundy. In the vineyards, our team selects the best grapes destined for vinification in our cellars at Château du Clos de Lupé.
Careful selection of the grapes, light pressing, partial or total de-stemming, cold maceration prior to fermentation are the techniques used to imprint our style on our wines. : rich and complex wines, redolent of ripe fruits which progressively reveal themselves at each stage in their evolution.
We are open to the world and ready to adapt to each situation ; we propose today a full range of the most prestigious appellations of our region. We export our wines to more than 70 countries all over the world.
100% Chardonnay
The grapes are hand picked then taken in harvesting cases to the winery as quickly as possible, so as to avoid heat, rain, bruising of the grapes or oxidisation. If necessary, the harvest is sorted eliminating all undesirable objects (leaves, unripe or later generation bunches, etc...). Gentle and selective pressing of whole bunches, using a pneumatic press and selection of the juices obtained, followed by strict static sedimentation (débourbage), where only gross impurities are removed, helps the extraction of the natural riches of grapes and terroir while preserving purity. The must is then put into oak casks the origin (Tronçais, Allier, Vosges) and the age (25 to 75% new wood) of which are ajusted to the needs of vintage and growth. Alcoholic fermentation takes place at cellar temperature via natural yeast from the terroir, lasting several weeks.
The wine is matured traditionaly for 10 to 16 months without any racking (no change of cask). It is during this period that it gently gains in structure and complexity with the help of periodic "bâtonnage" (stirring-up of lees), malolactic fermentation (natural degradation of the acids) and the exchanges with the barrels (olfactive and oxido-reductive exchanges). Light filtration before bottling completes maturation without damaging the harmony and natural aging potential previously acquired.
Pale gold crystalline in colour with straw yellow glints. It has a intense nose with delicate smoked wooded hints. Notes of dried fruit, hazelnuts and a hint of minerality. The palate is well-balanced, powerful with a good lenght. Lightly melted and harmonious tannins.
