WINEMAKING: The grapes are hand-harvested and destemmed. The juice ferments in 600L 7 year-old wooden barrels. The wine ferments for about 2 months with indigenous yeast. Fermentation finishes in bottle over a 2 month period as a pet nat. The wine is unfiltered, unfined, with zero sulfur added.
TASTING NOTES: Refreshing & energetic (electrifying!) wine, salty-citrus-exotic sparkler.
Neuburger (for personality), Muller (for quantity – that warning on the back label ain't there for nothing, it drinks veeery easily) & Muscat (for some out-of-this-world tropical oomph).
