In 2005, Yoshiaki Sato and his wife Kyoko, quit their banking jobs and settled in New Zealand to study grape growing and winemaking, gained hands-on experience at Central Otago wineries and started making their minimal intervention wines in 2009. They have been sourcing grapes from two organic vineyard sites in Central Otago and in 2016 they purchased their own farm: a five-hectares vineyard on Mount Pisa, planted with Pinot Noir, Chardonnay, Chenin Blanc, Gamay Noir and Cabernet Franc. They picked early to retain freshness and acidity, and to avoid having fruits that are too ripe.

SOILS: Gravely, mineral abundant, well-drained soil with quartz and schist.
FARMING: No pesticides, herbicides, systemic fungicides or inorganic fertilisers used. 19hl/ha
WINEMAKING: Hand picked on 8th - 13th March 2018, 34hl/ha. Natural yeast fermentation. 5% whole bunch. No commercial enzymes, bacteria or additives used except for <20mg/L sulphites before bottling. 19 months in French oak barrels. No new oak. Bottled on 1st November 2019 without fining or filtration. 5688 bottles produced.
TASTING NOTES: Floral with red & black berry nose. Medium dense body with cherries and spices. Long length.
