This wine is made from organically grown, autochthonous white grapes; predominantly Grecanico (70%), sourced from several small vineyards, high on the north face of Mt Etna. The grapes were hand harvested from these old vineyards during the third week of September. The average age of the vines is 80 years old. The altitudes of the vineyards are 800-1100 metres above sea level. Soils are basalt; dark grey, sandy and rocky with high mineral content.
The majority of the Grecanico, which includes a large percentage of Grecanico Dorato was macerated for one week on skins, being foot trodden several times. The rest of the grapes, which had been picked as a field blend (Carricante, Minnella Bianca, Insolia) were whole bunch pressed together into a 20hl old, wooden cask. Fermentation was spontaneous without temperature control. The wine underwent malolactic fermentation and was left on fine lees for 12 months prior to bottling, without fining or filtering in December 2021.
Mid straw, this wine has attractive aromas of lime, lemons and white peach. The dry palate has ripe citrus flavours, a lively acidity and good palate length. The wine displays an underlying minerality and sapidity characteristic of grapes grown on volcanic soils.
